Are you ready for this delicious peanut butter creamed ice-cream?!
This is a dessert that you can easily make when you are looking for something sweet.
Whether you can make the peanut butter ice-cream or you top it off with these toughy-like peanut butter balls, this dessert is a win.
High in monounsaturated fats, vitamin B3, vitamin E, magnesium, manganaese and pre-biotics, this ice-cream doesnt just give you a peanut butter fix.
Here is how you make it:
Ingredients (serves 4)
Peanut butter balls (makes 12 balls) 1 large fresh banana or 2 small bananas (sliced into chunks)
2 cups of oat flour (made by popping 2 cups of oats into the food processor and blending into a powder)
¼ cup of rolled oats
½ teaspoon of vanilla powder (extract)
¼ teaspoon of salt
1 tablespoons of sugar free peanut butter
1 tablespoon of water
Peanut butter ball coating 2 tablespoons of peanut butter
½ teaspoon of honey
1 tablespoon of coconut oil
Peanut butter Ice-cream 3 large frozen bananas (peeled, cut and frozen in smaller chunks)
¼ cup of sugar free peanut butter
1 teaspoon of vanilla powder
1 teaspoon of lemon juice
¼ teaspoon of salt
Peanuts- roasted and salted ½ cup of raw peanuts
¼ teaspoon salt
¼ teaspoon raw honey
Other garnish 2-3 tablespoons of coconut flakes
Method
Peanut butter balls and coating (to be prepared the day before) 1 Place the 1 large fresh banana, 2 cups of oat flour, 1/4 cup whole rolled oats, vanilla extract, salt, peanut butter and water into a large mixing bowl. Mash and mix until all combined.
2 Add more water or a bit more peanut butter if needed.
3 Roll the blended mixture into small bite-size balls, placing them in a Tupperware.
4 Refrigerate overnight.
5 The following day remove the balls from the fridge.
6 Place a saucepan onto a low heat and add the peanut butter, honey and coconut oil
7 Mix the ingredients together until they melt and pour it over the peanut butter balls.
8 Roll the balls around the Tupperware, coating the balls. They wont coat evenly so don’t worry about that.
Peanuts- roasted and salted 1 Pre-heat the oven to 180oC and cover a roasting tray with baking paper.
2 Place the peanuts on the roasting tray, drizzle them with olive oil, honey and sprinkle some salt.
3 Rub the oil and honey in with your hands.
4 Roast the nuts for 10 minutes.Set aside for plating
Peanut butter Ice-cream 1 In a food processor or a strong blender, pop the cut up frozen bananas, the peanut butter, vanilla powder, salt and lemon juice.
2 Blend until a very creamy texture is formed.
Plating 1 Pour the Ice-cream into a bowl, smoothing it out with the back of a spoon.
2 Place the peanuts alongside the one edge of the bowl.
4 Beside the nuts, place the coconut flakes in a long line across the side of the bowl.
5 Take 2-3 peanut butter balls for a small bowl, or more for a big bowl and place them next to the coconut flakes.
Dig in!!!
